Ingredients:

  • 2 cups self-raising flour

  • 1/3 cup sugar

  • 1 cup mashed pumpkin

  • 1 egg

  • 1/4 cup milk

  • 2 tablespoons soft butter

  • Extra flour for rolling

  • 1 egg yolk

  • 2 tablespoons milk

 

 
  1. Pre-heat oven 200 -220 degrees. 

  2. Cream butter and sugar in a large bowl.

  3. Add egg and mix.

  4. Add mashed pumpkin and mix.

  5. Add sifted flour and milk alternately and mix to form a moist dough.

  6. Turn out onto a floured board.

  7. Knead lightly.

  8. Press out out scone mix is approximately 2.5cm thick.

  9. Cut dough using a scone cutter.

  10. Place scones close together on a greased oven tray.

  11. Beat an egg yolk and 2 tablespoons of milk together.

  12. Brush scones lightly with egg and milk mix.

  13. Bake in a oven for 10 - 15 minutes.

  14.  Serve hot or cold with butter or jam and cream.
